Not having over-ripe bananas? If you know you want to make banana bread the next day, add a bunch of bananas to a sealed paper bag the day before. Placing them in a bag will cause a built-up of the gas responsible for the ripening process. You can speed up the ripening process by adding an apple to the bag.
Placing the bananas in a paper bag will speed up the ripening process, but if you are starting with very green, unripe bananas, this won’t be quick enough either.
If in a hurry, you can quickly ripen the bananas by adding them to the oven at 300° F (150°C) for about 15-20 minutes. I’d also recommend this just with already yellow bananas.

When choosing your bananas, definitely opt for overripe ones. They will give the bread the best taste and bind together nicely. Even though they might not look the most appetizing, overripe bananas are fantastic for this vegan banana bread. My rule of thumb: If they are more black than yellow, they should go into banana bread.
Pro tip: You can freeze the overripe bananas until you have enough to make banana bread. So, next time your bananas are a day over, just put them in the freezer, and once you have enough of them, it is banana bread time again.
Aside from the bananas, there are only a handful of essential ingredients in this recipe. You will need flour, cane sugar, vegan butter, oat milk, baking powder, and salt.
If you want to make this recipe gluten-free, you can swap the flour for a gluten-free flour of your choice.
If you don’t have a vegan butter substitute, a neutral vegetable cooking oil like canola oil will work perfectly for this vegan banana bread recipe.
Regarding sweeteners, I like using organic cane sugar. You can also use white sugar.

Making the Batter:
Next, take a big bowl and add your bananas. Crush them using a fork into a mash. It is no problem if there are some banana lumps left. I enjoy having some of them in my banana bread. Also, melt the vegan butter substitute.
Once the banana is mashed, add all the other ingredients. Next, mix the ingredients until combined. A light mix is enough for this recipe. Overmixing the dough will make the banana bread too dense. I like to add ¾ of my chopped walnuts and half of the chocolate to the banana bread dough. Reserve the rest for garnishing!
Baking & Garnishing:
And that’s all there is to this vegan banana bread recipe. Add the dough to a greased loaf pan. Finally, sprinkle the vegan banana bread with your remaining chocolate and walnuts. Bake the banana bread at 356° F (180° C) for 50 mins. You can check with a toothpick if the banana bread is ready. If the toothpick comes out clean after poking the bread, you are good to go.
