Recently, I’ve been experimenting with more and more banana bread flavors. Good old plain banana bread is great, but there are so many delicious variations to try. I’m a huge fan of this coffee banana bread. The bitterness and boldness of coffee and dark chocolate pair nicely with the banana flavor. I like to keep the sweetness of this coffee banana bread on the lower side. I’ve tried this recipe on some of my friends, and everybody loved it, so I hope you do too!
Ingredients for making Coffee Banana Bread:
- All-purpose flour
- Overripe bananas
- White sugar
- Cane sugar
- Instant coffee
- Freshly brewed espresso
- Vegan butter substitute
- Cinnamon
- Baking chocolate
- Baking powder
- Vegan dark chocolate (78% cocoa)
- 1 pinch salt
We use the same ingredients as when making my standard vegan easy banana bread, plus some additions to spice things up. The rule of thumb for banana bread: the riper the bananas, the better. I have some overripe bananas on hand, as I have been planning on making this recipe for a while now. Usually, I like to have a whole batch of overripe bananas peeled & frozen for these occasions.
For the other ingredients, I like using a combination of white and cane sugar. You can also only use one of the two. To give this coffee banana bread its flavor, I like using a combination of instant coffee and espresso. Also, I am complementing the baking chocolate with dark vegan chocolate for more bitterness.
Finally, I like melting a mild-tasting vegan butter substitute for these kinds of recipes. Making banana bread works just as well with a neutral cooking oil, so feel free to substitute with that if you don’t have a nice vegan butter substitute available.
Coffee Banana Bread Recipe:
Firstly, mash the bananas with a fork. It’s fine if some pieces remain. Add the flour, white sugar, instant coffee, melted vegan butter substitute, espresso, cinnamon, baking powder, and a pinch of salt, and combine. You can already preheat the oven to 180° C (360F°).
Next, add finely chopped dark chocolate and half of your baking chocolate. Check for seasoning. The dough should have a rather wet consistency. You can add some plant-based milk or more coffee if the dough is too dry.
The dough can be folded in by hand. There is no need to mix it a lot. Over-mixing the dough will even make the banana bread too dense.
Baking the Banana Bread:
Making this vegan coffee banana bread is as simple as that. Add the dough to a greased loaf pan and sprinkle the banana bread with your remaining baking chocolate and cane sugar for some nice caramelization. Bake the banana bread at 180° C (360° F) for 50 mins. You can check with a toothpick if the bread is ready. If the toothpick comes out clean after poking the bread, you are good to go!
Let the coffee banana bread sit for 15 minutes after baking before digging in.
Serving Suggestions:
This espresso banana bread has so much flavor. It doesn’t need anything else. Having a slice of it with my morning coffee is perfection. I’m having quite a lot of coffee, I just realized!
Otherwise, it pairs nicely with vegan vanilla ice cream or nut butter.
