Twirl your fork into a mound of al dente spaghetti coated with a fragrant cherry tomato sauce. This cherry tomato pasta recipe promises a culinary experience full of richness and taste, all while being vegan!

Ingredients You’ll Need For Cherry Tomato Pasta

  • Cherry Tomatoes: Their vibrant color and flavor are the foundation of this pasta dish.
  • Pasta: Whether it’s spaghetti, penne, or fusilli, choose one that promises to soak up that luscious sauce. I am going with spaghetti today!
  • Fresh Basil: The fragrant freshness of basil brings this dish to the next level.
  • Extra Virgin Olive Oil: For that silken texture and inherent richness.
  • Garlic: Minced or finely chopped, it’s the unsung hero that builds the dish’s aromatic foundation.
  • Salt and Pepper: season can’t miss!
  • Optional Additions: Take this dish to the next level with some delicious vegan parmesan cheese
  • Vegan Proteins (Optional): Add some legumes if you’re in the mood for an extra boost of protein! Cannellini or borlotti beans can make a fantastic addition to this dish.

How to make cherry tomato pasta: 

Preparation: Begin by washing the cherry tomatoes and basil. Halve the tomatoes and set them aside. Give the garlic a good smash with the knife, and roughly chop it.

In a large pan, heat the olive oil over medium heat. Add the tomatoes face down. Once the tomatoes start to soften and lose some liquid, introduce the minced garlic. Saute together. That smell will make you dizzy with hunger. Toss the mixture around every once in a while, to prevent burning.

Pasta Perfection: Meanwhile, in a pot of boiling salted water, cook your pasta. For this recipe, I like to cook pasta with rather little water. The pasta water will be extra starchy, making the sauce for the pasta even more creamy! Cook the pasta a minute shy of al dente, and finish everything in the sauce. 

Merge and Mix: Once the pasta’s ready, drain it and add it to the pan with the cherry tomato sauce. Add a sip of that starchy pasta water. Also, add some of that delicious fragrant basil. Gently mix, ensuring the spaghetti is generously coated in a thick and delicious sauce.

Finishing Touches: Stir until everything is wonderfully combined. If you’re opting for extra protein, now’s the time to fold it in. Check for seasoning. Garnish the pasta with the remaining basil, vegan cheese, or any garnishes you like! I went with an additional crack of black pepper.

Ingredients

Scale

200g spaghetti

80ml olive oil

300g cherry tomatoes

3 cloves garlic

1 handful of basil leaves

Salt & pepper to taste


Instructions

Wash the cherry tomatoes and basil. Halve the tomatoes and set them aside. Give the garlic a good smash with the knife, and roughly chop it.

Heat the olive oil over medium heat. Add the tomatoes face down. Once the tomatoes start to soften and lose some liquid, introduce the minced garlic. Saute together and toss to prevent burning.

Cook the pasta in a pot of salted boiling water. Cook the pasta a minute shy of al dente.

Drain the pasta and add it to the pan with the cherry tomato sauce. Add some of the starchy pasta water. Also, add some of that delicious fragrant basil. Gently mix so the pasta is coated in a creamy sauce.

Garnish the pasta with the remaining fresh basil, vegan parmesan substitute, or any other garnishes you like.

Notes

If you want to make this recipe gluten-free, opt for gluten-free pasta.

You can add protein to this dish by adding borlotti or cannellini beans to the pasta.
