The Star of the Dish: Fresh Figs

Fresh figs are simply the best. They are so versatile, no matter if you want to eat them raw or use them for cooking. The fig trees in my grandparents’ garden had so many figs this year that I had the chance to explore many delicious recipes with them. This fig crostini is one of my favorite quick fig snacks. The natural flavor of the figs shines through, and it pairs deliciously with the vegan cashew cream cheese.

The vegan cashew cream cheese builds the basis of the dish. It elevates the flavor of the figs a lot. Making vegan cashew cream cheese is super easy and low effort. It is worth going the extra mile to make vegan cream cheese for this recipe. My recommendation: Make some more and enjoy the vegan cream cheese with other dishes as well. Aside from that, I like to keep it simple with these fig crostini. My cashew cream cheese had enough salt for this recipe, so I simply finished the crostini with some finely cut basil, a pinch of pepper, and a drizzle of extra-virgin olive oil for an extra fragrant kick. If you like some additional acidity, balsamic vinegar makes a nice addition to round it all off.

Making this crostini is super easy. Firstly, cut the bread into thin slices and give it a good toast. I like it to be nicely golden brown. Pro tip: Toast the bread after thinly brushing it with some olive oil to get an extra amazing crust and taste. 

Once the bread is ready, give it a generous smear of the vegan cashew cream cheese. Top everything with nicely minced fig, and finish it with thinly sliced basil, pepper, olive oil, or balsamic vinegar.

6 slices of Bread (Ciabatta or Baguette)

3 fresh figs

6 tbsp cashew cream cheese

3 tbsp extra-virgin olive oil

Salt & pepper

Optional: fresh basil

Optional: balsamic vinegar

Instructions

Cut the bread of your choice into thin slices, and toast the bread after thinly brushing it with some olive oil to get an extra amazing crust and taste.

Give each slice a generous smear of the vegan cashew cream cheese. Top everything with nicely minced fig, and finish it with the thinly sliced basil, pepper, olive oil, or balsamic vinegar.
