With these overnight oats, you won’t have any stress of getting a great breakfast to start the day right. They are super easy to make, needing only 10 minutes of preparation. And they are so delicious. The peanut butter pairs fantastically with the fruits and a bit of cinnamon rounds it all off. Also, this vegan peanut butter overnight oats recipe leaves a lot of room for customization. Flaxseeds, hemp seeds, or other nut butter instead of peanut butter add variety and options for other healthy ingredients. An abundance of delicious toppings make sure this recipe won’t get boring. Choice of Oats: 

Regarding oats, I like to use a type that keeps some consistency even after soaking overnight. I usually use rolled oats, quick oats, and instant oats I find to lose too much texture. If you are meal prepping for multiple days, you can even use steel-cut oats if soaking them for 10+ hours. But overall, I like to stick with rolled oats.

Other Ingredients: 

With the other ingredients for these vegan peanut butter overnight oats, I am keeping it simple. Regarding fruit, banana pairs just great with peanut butter. Furthermore, strawberries make a great addition to brighten the flavor. Regarding plant-based milk, I like using soy or oat milk for this recipe. 

Aside from that, I am adding only peanut butter, some cinnamon, and a little bit of maple syrup. Maple syrup works well as a sweetener for this dish. If your banana is quite ripe, you might not even need an additional sweetener. 

Regarding toppings, I like to add more strawberry, banana, maple syrup, and peanut butter. Some cocoa nibs for bitterness and crunch and banana chips for more texture make delicious additions.

Vegan Peanut Butter Overnight Oats Recipe: 

Making this recipe is super straightforward and quick. Firstly, pick a jar in which you want to prepare your overnight oats. I like using these glass jam jars as they look nice, but you might as well take a glass or a bowl. Cut the banana and strawberry into bite-sized pieces. 

Add the oats to a bowl together with the cinnamon. Mix them to combine. 

Now, you can start layering your cinnamon-coated oats, banana, strawberry, and any other optional ingredients you’d like to add to the jar. Leave an inch of space at the top. The oats will also gain some more volume after soaking the plant-based milk.

Next, top generously with your plant-based milk of choice. Screw on the lid of your jar or cover your bowl well before keeping them in the fridge overnight. Before serving, I like to give them a little mix.
