I like using red rice when making this rice porridge. It keeps a great texture, and its taste harmonizes super well with the almond butter. For sweetness, I like to add some maple syrup and marmalade. Aside from this, the recipe leaves lots of room for customization. You can, for example, add other delicious and healthy seeds such as hemp, chia, or flax seeds, and any other fruits of your liking. This recipe is a blank canvas, making sure this sweet rice porridge won’t get boring! But for me, it’s all I need. It tastes incredibly well, just as it is.

How to make this sweet rice porridge: 

Making this sweet rice porridge is super simple. You only need to cook the rice and add the toppings and seasonings of your choice! 

Firstly, wash the rice thoroughly. Add the washed rice to a pot, add boiling water, and bring to a boil. For the sweet rice porridge, I like to cook the rice pretty soft, using a bit more liquid than when cooking rice otherwise. On 400g ( 2 cups) of brown rice, I used 1 ½ liters (6.3 Cups) of water. Once boiling, reduce the temperature and bring the pot to a simmer. Cook the rice for about 40 minutes.

While the rice is boiling, you can prepare your toppings for the porridge. Peel the banana and cut it into pieces. Also, I like to add some toasted almonds as a topping! Carefully toast them in a pan on medium heat, and set aside for garnishing. 

Once the rice is soft, take it from the heat. I like to add some maple syrup and cinnamon to rice. Stir well before plating the sweet rice porridge into bowls of your choice. 

Now, you can garnish the sweet rice porridge. I added banana slices, a drizzle of maple syrup, and a good amount of almond butter! It pairs so well with the rice! A bit of red currant jam rounds everything off. But feel free to use any jam or marmalade you like. A last pinch of cinnamon and breakfast is ready!

2 bananas

120ml maple syrup

3 tbsp jam (i used red currant jam)

150g almond butter

100g almonds

1 tsp cinnamon

Instructions

Wash the rice thoroughly. Add the washed rice to a pot, add boiling water, and bring to a boil. Once boiling, reduce the temperature and bring the pot to a simmer. Cook the rice for about 40 minutes.

Peel the banana and cut it into pieces. Carefully toast the almonds in a pan on medium heat, and set aside for garnishing.

Once the rice is soft, take it from the heat. Add some maple syrup and cinnamon to the rice.

Garnish the rice porridge with the remaining toppings. Add banana slices, toasted almonds, almond butter, jam, a pinch of cinnamon, and the remaining maple syrup.
