Peach Water Kefir Recipe

two glasses of peach kefir, garnished with peach and thyme

One of my favorite flavors of water kefir is peach water kefir. The fruity notes of the peach add to the kefir while not overpowering its natural, refreshing taste. It is super simple to infuse the kefir with peach flavor during secondary fermentation.

What is Water Kefir?

Water kefir is a fermented drink made from water kefir grains with sugar water or fruit juice. These grains contain beneficial bacteria and yeast that consume the sugars during fermentation, resulting in a naturally fizzy and probiotic-rich beverage. Also, it is possible to infuse the water kefir with other delicious flavors during secondary fermentations. Water kefir can offer health benefits: It is a fantastic source of probiotics, which promote healthy gut flora and support digestion!

Ingredients for Peach Water Kefir

The essential ingredients for making peach water kefir are water kefir grains, sugar, water, and peaches. The final taste can vary depending on what kind of peach you use. I’d recommend just going with what you would also like to eat. I used delicious flat peaches today, which worked amazingly.

How to make peach water kefir:

Primary Fermentation: Brewing Water Kefir

First, we want to make basic water kefir before infusing it with peach flavor. This is pretty simple when you have the kefir grains on hand. Dissolve sugar in water, add some lemon and dried fruits, and let it ferment for 24-48 hours in a fermentation jar. Still, there are quite a few things to consider and look out for: I’d recommend giving this ultimate guide to water kefir a read before starting any fermentations.

Secondary Fermentation: Flavors and Carbonation

During the stage of secondary fermentation, flavors, and carbonation develop in the water kefir. This is where the magic of peach water kefir begins! Give the peaches a good wash, and cut them into small cubes. Add the peaches to clean bottles or jars, and top them with your water kefir. Let them ferment for 24-48 hours until the kefir reaches a flavor you are happy with! This time will depend a bit on the strength of your kefir and the temperature. I’d recommend to regularly burp the bottles to avoid explosions.

Once you are satisfied, you are ready to enjoy this refreshing beverage. I simply pour it from the bottle through a fine sieve and serve it over ice. The perfect summer refreshment! Feel free to go creative with garnishing. I went with some thyme today, but peach slices, mint leaves, or a sprinkle of cinnamon will enhance the visual appeal, smell, and taste!
