This drink surely doesn’t get boring, and it is a delicious flavor combination I can just recommend when experimenting with secondary fermentations on your water kefir!
What is Water Kefir?
Water kefir is a bubbly fermented beverage created from water kefir grains along with sugar water. These grains are packed with bacteria and yeast that consume sugars during the fermentation process, creating a delicious probiotic drink. These probiotics can promote overall health and a healthy digestive system!
Also, the drink continues to ferment, making it possible to introduce other delicious flavors to the beverage during secondary fermentation. This is exactly what we are doing here when making tonka bean banana kefir! Secondary fermentation opens unlimited flavor possibilities when making water kefir, making sure this delicious beverage never gets boring!
Ingredients you need for Tonka Banana Water Kefir:
- ½ banana
- 1 tonka bean
- 2 glasses of freshly brewed water kefir
I enjoy the flavor combination of tonka bean and banana. It yields a very exotic flavor. The bold vanilla and almond-like notes of tonka beans pair well with the sweetness and exotic banana flavor. If you are not a fan of tonka beans, you can also omit them and make only banana water kefir. It tastes fantastic as well.

Recipe for how to make Banana Water Kefir:
Primary Fermentation: Brewing Water Kefir
First, we want to make basic water kefir before infusing it. Making kefir is pretty simple when you have the kefir grains on hand. Dissolve sugar in water, add some lemon and dried fruits, and let it ferment for 24-48 hours in a fermentation jar. Still, there are quite a few things to consider and look out for: I’d recommend giving this ultimate guide to water kefir a read before starting any fermentations.
Secondary Fermentation: Flavors and Carbonation
During the secondary fermentation, flavors, and carbonation develop in the water kefir! Peel the banana, and cut the fruit into manageable pieces fitting in your jar or bottle for secondary fermentation. Smash the tonka bean lightly so it releases more flavor. I’d recommend using at most one bean per bottle, as the flavor is quite intense. I cracked them by pressing them down with the flat surface of my kitchen knife, similar to when crushing a garlic clove.
Top everything off with your freshly brewed water kefir, and let them ferment for 24-48 hours until the kefir reaches a flavor you like. This time will depend on the strength of your kefir, the temperature, and your preference for taste. I’d recommend regularly burping the bottles to avoid explosions.
Once satisfied with the flavor, you can strain the fruit and tonka from the bottles so it doesn’t adopt more of its taste. Keep the bottles chilled to slow further fermentation. Still, the drink will continue to develop, so I recommend consuming it soon after you think it is ready! Simply serve it chilled over ice! It’s such a great summer refresher!
