Today, I got one of my favorite side dishes ever: A simple chickpea stew. This recipe is as simple to make as it is delicious. It requires very little effort and brings tasty, high-quality plant-based protein to any meal. It is also super budget-friendly and uses few ingredients. Are you sold? Ingredients you need for this chickpea stew:
- Chickpeas
- Olive oil
- Chilli
- Garlic
- Salt & pepper
These are the only ingredients you need to make this chickpea stew. It’s a perfect side dish as it is. Still, this recipe leaves lots of room for customization. You can also add vegetables like kale, spinach, or broccoli. Also, herbs like thyme or parsley can make nice additions. But for today, I am keeping it simple, and that’s also how I eat this stew most days!
Regarding chickpeas, I like to use canned chickpeas for this recipe. They are quick to use, and the aquafaba liquid makes a perfect addition to this delicious chickpea stew. This recipe also works with dried chickpeas. Just make sure to soak them overnight and cook them until soft. Regarding the chili, you can use either fresh or dried chili. I like using fresh pepperoncini, but dried chili flakes work perfectly fine too.
This chickpea stew works fantastically on bread or little crostinis! It is pretty similar to delicious musabaha, now that I think about it.
Mediterranean chickpea stew recipe:
The recipe is so simple. Firstly, mince the garlic and chili. Depending on the spiciness of your chili, you can decide if you want to keep the seeds in or take them out. I like to have a good spice for this stew, so I am keeping mine in today! Next, get a pot on your stove. Add half of the olive oil, together with the chili and garlic. Heat the oil slowly so the olive oil infuses with the delicious flavors.
Once the garlic turns translucent, add your chickpeas together with the acquafaba liquid. Furthermore, add hot water until the chickpeas are fully submerged.
If adding any other vegetables, now is the time! Bring to a simmer and cook for at least half an hour. For the last fifteen minutes, cook without a lid. The chickpeas should become super soft and creamy.
After half an hour, the liquid should have reduced. Check for seasoning, and add salt and pepper as needed. I like to mash the chickpeas with a fork until the stew reaches a nice, thick consistency! You can plate the chickpea stew with the remaining olive oil. I garnished mine with some additional chilli and fresh parley leaves.

Notes
Both dried or canned chickpeas work for this recipe. If you want to use dried chickpeas, soak them over night, and cook them longer as needed.
You can customize this recipe with other vegetables as well. Kale, spinach or herbs can make great additions.
