Easter Puff Pastry Cookies For Kids

These puff pastry cookies are an easy way to put a smile on everyone’s face at the Easter coffee table: I picked up some ready-made puff pastry from the supermarket and cut it into animal shapes. I chose two large cookie cutters, one for lambs and one for bunnies. These larger cutters are perfect for puff pastry, the cookies look huge compared to regular cookies, but because the dough is so light and airy and contains very little sugar, that’s perfectly okay. Since the animals still need a coat, I gave them one made from shredded coconut. This recipe is quick to make and could also be a nice surprise for children’s birthdays or for a kindergarten party. Give them a try – even vegans will love eating these little animals!

Ingredients for making Puff Pastry Cookies with Coconut Topping:

  • Vegan chilled ready-made puff pastry
  • Grated coconut
  • Plain sugar
  • Aquafaba (chickpea water)
  • Vegan chocolate drops (or similar) for the eyes
  • I used a 13 x 11cm (5 x 4.3 inch) lamb cookie cutter and a similarly large Easter bunny cookie cutter.

How to make Easter Puff Pastry Cookies:

Remove the puff pastry from the refrigerator 10 minutes before use and roll it out. Using the animal cutters, cut out as many cookies as possible from your puff pastry and place them on a baking sheet. Preheat the oven to 200°C (395°F).

Coconut Topping:

In a saucepan, gently heat the aquafaba with the sugar until lukewarm, stirring with a spoon to dissolve the sugar. Then add the grated coconut and continue stirring until well mixed. The coat for the animals is ready! (Don’t be confused by the large amount of topping in the photo below, I made way too much).

Spread the coconut topping over the cookie cutouts and place the tray in the oven at 200°C (395°F) for 10 minutes.

Tip about Aquafaba (Chickpea Liquid):

Aquafaba is the water in which chickpeas are cooked. It can replace egg whites in vegan cooking. The protein in chickpea liquid acts as a binder, and in this puff pastry cookie recipe, it holds together the coconut flakes for our pastry topping. Instead of buying extra aquafaba, you can take a can of chickpeas and use the liquid from it-the actual flavor will disappear and you won’t be able to taste it in the pastry. Just make sure the aquafaba is unsalted before making this recipe 😉

Easter Puff Pastry Cookies for Kids

This ready-made puff pastry recipe is quick and super easy to make, and young and old alike will love it! Ingredients

700g rolled puff pastry

25ml aquafaba

50g grated coconut

25g sugar

Decoration: vegan chocolate drops (or similar) for eyes

Instructions

Using the animal shape, cut out as many cookies as possible and place on a baking sheet.

In a saucepan, gently heat the aquafaba with the sugar to lukewarm, stirring with a spoon until the sugar dissolves. Then add the grated coconut and continue stirring until well mixed.

Spread the coconut topping over the cookie cutouts.

Place the tray in the oven at 200°C (395°F) for 10 minutes.

Decorate: To stick the chocolate drops for the eyes on the cookies, I mixed some powdered sugar with lemon juice. You could also melt some chocolate or use icing from a tube.

Notes

You can use any cookie cutter shape you’d like for these puff pasty cookies. The puff pastry will expand a bit, so I’d recommend not using shapes with too much detail.
