- Rice mix
- Black beans
- Guacamole

Jackfruit is the star of this burrito. When you pull it, it resembles the texture of pulled pork. We will flavour it with spices to give it a delicious BBQ-style flavour. Additionally, black beans can’t miss in this burrito. I like to add a rice mix with wild rice to this burrito. It has some more texture and flavour than plain white rice. But you can, of course, substitute this for plain white rice if you like. Next, homemade guacamole, salsa and vegan sour cream make fantastic additions to this burrito. If you cannot get vegan sour cream in your region, soy yoghurt makes a delicious addition. This jackfruit burrito will taste great as it is, but feel free to add more ingredients. Tomatoes, salad, corn, herbs or other vegetables are delicious options.
To make the recipe gluten-free, choose gluten-free tortilla wraps, and substitute soy sauce for tamari.
Pulled Jackfruit Burrito Recipe:
For this recipe, I recommend preparing all the ingredients before starting to cook. Firstly, let’s sort the sauces out. If you make salsa and guacamole at home, prepare these before making the rest of the jackfruit burrito.
Next, rinse the jackfruit, and pull it into pieces using your fingers or a fork.
Next, cook the rice. Depending on how you cook the rice and if you use wild rice or white rice, ratios will vary. I cooked mine on the stovetop with a 2-1 ratio.
Rinse the beans, and bring them to a light simmer. We want them to be deliciously soft. That should take just 10-15 minutes of cooking time.
To make the meaty jackfruit filling, add some oil and minced garlic to a pan. When the garlic is turning translucent, add the jackfruit and the spices. Now, sauté the jackfruit for 15 minutes, until it is coated in spices and has softened a bit. Check for seasoning.
Finally, we can bring it all together. Heat a tortilla gently, and add the fillings. I like to add some extra lime juice and cilantro. Fold up and roll the burrito. You can directly wrap it or heat the burrito to seal it. I placed it into my electric grill, but you can also add it to a pan and apply gentle pressure. That should only take a minute or two.
