Cereal Bars with Sweet Potato

Do you need some energy while on the go? Or are you looking for a way to have your favorite muesli as a snack? Then try these sweet potato cereal bars. They are really tasty, healthy, and give a good energy boost!

When I came up with this recipe, I froze a batch of these bars. I’m still snacking them every other day. It’s super convenient to have these cereal bars around if you are feeling like a guilt-free snack.

Ingredients for making Sweet Potato Cereal Bars:

Eleven bowls are placed on green ground. They are filled with oat flakes, raisins, Pumpkin seeds, sunflower seeds, crushed linseed, walnuts, brown sugar, almonds, peanut butter, sesame seeds, and dark chocolate. Behind are a sweet potato and a jug of coconut oil.

How to make Cereal Bars with Sweet Potato:

First, we will prepare the sweet potato. Peel it, and cut it into small pieces to cook until soft.

When it is done cooking, mash it with a potato masher.

Secondly, you will need to chop the nuts. You can also do this manually by putting them all on a cutting board and chopping them into pieces with a large knife.

Next, melt the coconut oil by heating it in a pan. The rest is easy: put all the other ingredients in a large bowl. Add the coconut oil and sweet potato puree and mix to combine. Now, it’s time to preheat the oven to 180°C/350F.

I used a rectangular tin measuring 25cm (9,8 inches) x 36cm (14,1 inches). Cover it with parchment paper and pour the mixture into it. Now, spread the cereal mix evenly and press it down firmly. Using your hands works perfectly fine for this. I only used the length of my pan to 26cm (10.2 inches). I’d recommend making the cereal bars 2cm/0,8inch high so they don’t break when transporting them.

Bake in the oven at 180°C/350F for about 30 minutes.

Once the mixture finished baking, we need to figure out how to cut it. I chose a size of 4cm (1,6inch) x 8cm (3,1inch). I went with the classic bar shape. It’s great for transport later.

Topping:

Now, we prepare the final chocolate topping. We will temper the chocolate so it keeps a good crunch and is more temperature-resistant. Break the 100g of dark chocolate and put half of it in a metal bowl. Pour hot water into a pot and place the bowl with chocolate into it so it slowly heats from the steam. Keep the temperature low so the chocolate slowly melts. Stir until the chocolate is molten. Then, remove the bowl from the heat and add the remaining chocolate pieces, stirring again until everything is molten.

On a wooden cutting board are lying three ready cereal bars with topping. In front is a metal bowl with melted chocolate. Behind the cutting board, there is a plate with two more cereal bars and a plate with roasted sesame seeds. All are placed on green ground.

Finally, take bar by bar and dip the top first in the melted chocolate and then dip it in the plate with the roasted sesame seeds and leave to dry for a few hours. Be quick with this step, as the molten chocolate will harden again.

Tip:

I wrap the bars in baking paper with a string around them. It takes a while but is very convenient for later transportation! I bagged them and put them in the freezer. I hope you enjoyed this sweet potato cereal bar recipe. Let me know what you think in the comments below!

These cereal bars with sesame and dark chocolate are the perfect energy snack for when you are on the go! They are simple to make and a healthy treat.

Ingredients

  • 200g oats
  • 300g sweet potatoe
  • 60g raisins
  • 30g walnuts
  • 30g almonds
  • 30g sunflower seeds
  • 30g pumpkin seeds
  • 30g crushed linseed
  • 30g peanut butter
  • 70g coconut oil
  • 70g brown sugar
  • 2 tsp Ceylon cinnamon
  • 1 pinch salt
  • 100g dark chocolate
  • 30g sesame seeds

Instructions

Peel and cut the sweet potato into small pieces and cook it until soft. When it is ready, mash it with a potato masher.

Chop the nuts roughly.

Melt the coconut oil by heating it in a pan.

Now, put all the other ingredients in a large bowl, add the coconut oil and sweet potato puree, and mix well.

Preheat the oven to 180°C/350F.

Prepare a baking tin and pour the dough into it. Spread it out evenly and press it down firmly. My cereal bars are 2cm (0,8 inch) high.

Bake at 180°C/350F for about 30 minutes.

When the dough is done baking, cut it into bars – I have chosen a size of 4cm (1,6 inches) x 8cm (3,1 inches).

Topping

Break the 100g of dark chocolate and put half of it in a metal bowl. Pour hot water into a pot and add the bowl with chocolate so it is heated from the steam. Stir until the chocolate melts, then remove the bowl from the pot and add the remaining finely chopped chocolate pieces, stirring until everything is melted.

Finally, take a bar by bar and dip the top in the melted chocolate and then in the roasted sesame seeds.

Leave to dry for a few hours.

Notes

I’ve wrapped each bar in baking paper with a string around them, which is very convenient for later transportation! I put them all in a bag in the freezer for storage.
