Wild Garlic Butter Recipe

You might already know how much I love wild garlic. If not, I love it a lot. In fact, I love all garlic a lot. But let’s not get side-tracked here: Last year, during the wild garlic season, I made a delicious wild garlic pesto and wild garlic pasta. And, finally, it’s in season again! Today, I have a simple seasonal spring recipe for you. This wild garlic butter has a kick to it! You only need three ingredients to make it, and it is made in no time. No matter if you enjoy it on bread, with potatoes, or on pasta, there are so many uses for this punchy little recipe. As this is a vegan blog, we will use a tasty vegan butter substitute for making this recipe, but it works the same way with regular butter. Let’s get right into making it!

What is Wild Garlic:

Wild garlic, also called ramson or cowleek, is a delicious plant. Here, in the tempered parts of Europe, it starts growing at the beginning of spring. Its fresh, fragrant flavor makes you feel like winter is finally over.

I picked my wild garlic from my grandparent’s garden, where it grows in abundance. There is nothing better to me than cooking with fresh, hand-picked ingredients! Everything tastes twice as good.

Be Careful if you Forage Wild Garlic:

Make sure to educate yourself before foraging. You will have to be extra careful when foraging wild garlic. There are numerous poisonous plants to confuse wild garlic with, such as lily of the valley, autumn crocuses, corn lilies, and others, which can easily be a deadly error. You should always consult with a professional when foraging but I’d recommend going the safe route and buying them in the store when in season.

  • Vegan butter substitute

This recipe probably has the shortest ingredient list on the blog so far. The wild garlic is the star of the dish. Make sure to use nice and fresh leaves. Regarding my vegan butter substitute, I used a mild version without the characteristic margarine taste, which I am not too much of a fan of. Lastly, we will only season the butter with a sprinkle of salt. The wild garlic does the rest!

How to make Wild Garlic Butter:

Making wild garlic butter is super straightforward. It only needs around 5 minutes of hands on work. Firstly, allow your vegan butter substitute to warm to room temperature to make it easier to handle. Next, thoroughly wash the wild garlic and pat it dry before processing. I like to finely mince the wild garlic to make the next step easier. Combine the wild garlic and vegan butter substitute and use an immersion blender until the butter turns a light green. It is no problem if some pieces of wild garlic remain. It gives the dish a nice and rustic look. Aside from that, there is not much more to do than add some salt. Check for seasoning.

Storing the Wild Garlic Butter:

Add the soft wild garlic butter on a sheet of parchment paper and roll it into a log. Then, twist the end to tighten the roll. Store in the fridge or freeze the wild garlic butter if you intend to store it for longer. If frozen, it keeps for months, and you can cut off slices for everyday use. In the fridge, it should easily stay fresh for a week.

This wild garlic butter goes so well with so many dishes. I like to have it on a slice of fresh, nice bread for breakfast or to finish boiled potatoes. Or to stuff roasted button mushrooms. Also, it goes well with vegetables such as asparagus, cauliflower, broccoli, or roasted carrots. But it doesn’t stop there. There are endless possibilities for enjoying this dish. A fantastic comfort food snack is making a simple baked wild garlic bread.

250g vegan butter substitute

1 bunch wild garlic

3/4 tsp salt

Instructions

Allow your vegan butter substitute to warm to room temperature.

Wash the wild garlic and pat it dry. Finely mince the wild garlic. Combine it with the vegan butter substitute and salt, and use an immersion blender until the butter turns a light green. Its fine if little bits of wild garlic remain.

Check for seasoning and enjoy.

Notes

You can store the wild garlic butter for a week in the fridge. You can freeze it if you intend to store it for longer.
