Nothing is quite as refreshing as a mango lassi. It is creamy, sweet, rich, and just overall delicious. While traditional lassis are usually not vegan due to the addition of yogurt and milk, it is easy to make delicious lassis vegan. After some experimentation, I have arrived at this recipe as a perfect summertime refresher. This recipe is simple, leaves lots of room for lots of customization, and is prepared in no time. A perfect quick drink for a little cool down!
Ingredients for making Mango Lassi:
- Ripe Mangoes
- Plant-based yogurt (soy or coconut)
- Ice cubes
- Cane sugar
- Salt
- Optional: 3/4 tsp rose water
- Optional: a little bit of saffron
- Optional: 1/2 tsp cardamom powder
- Optional: Fresh mint

The mango is the star of this recipe. Ripe mangoes work by far the best for this lassi. When checking the mangoes, the flesh should feel slightly soft when pressing, and the mango should smell aromatic. Little black dots on the skin can also be a clue. The color of the mango itself does not matter; there are about 1,000 different types of mangoes in many different colors.
Also, mangoes shouldn’t be stored in the refrigerator – they lose flavor in the cold. Unripe mangoes will ripen at home at room temperature for about four days (Fruits that are not ripe by then have been picked too early and will not ripen). Also, the ripe ones should be used quickly, or they will begin to ferment. This mango lassi is a perfect quick recipe to make good use of your ripe mangoes.
How to make Mango Lassi:
Making the mango lassi is super easy. Slice the mango along its pit so you have two big mango pieces. Carefully slice off all the flesh from the pit and add it to your blender. Cut the big pieces both horizontally and vertically while not slicing through the skin. Then, you can fold the mango so it is super easy to cut off the exposed mango cubes. Cutting the mango this way saves a lot of time!
Add the mango, together with the ice, yogurt, cane sugar, salt, and aromatics of choice into the blender. I added all of the listed aromatics. I love the taste of mint, cardamom, rose water, and saffron. It gives the recipe its certain kick. But the lassi will still be delicious even if you keep it plain. And that’s all there is to it. Nothing left but to enjoy it while the mango lassi is nice and cold!

Instructions
Add the mango, together with the ice, yogurt, cane sugar, salt, and aromatics of choice into the blender.
Blend until smooth.
Notes
You can play around with the aromatics. I love this spice mix but you can customize the flavor to your linking.
