On a warm summer day, what could be more satisfying than a comforting, fresh, and delicious cherry tomato pasta? There is nothing quite like a plate of al dente spaghetti coated with a sweet and creamy cherry tomato sauce. This simple cherry tomato pasta is rich, super simple to make, and, of course, vegan. You can prepare this delicious dish with only six basic ingredients and less then half an hour of cooking time. This recipe is a treat, especially during the summer months. Let’s get right into it!

Ingredients You’ll Need For Cherry Tomato Pasta

The ingredient list for this delicious cherry tomato pasta is short and simple. The star for the sauce are the cherry tomatoes. Their sweetness and acidity gives this dish so much flavor. Paired with a high-quality, extra-virgin olive oil and basil, this sauce has it all. Some garlic will give the dish an extra depth of flavor. Regarding the pasta, I like to use Spaghetti for this dish. For seasoning, only salt & pepper are needed, the sauce has more than enough flavor on its own. If you want to round everything off, this cashew & nutritional yeast-based vegan parmesan substitute is the perfect choice for this recipe. In case you want to sneak in some extra protein, you can add cannellini beans to the sauce.

How to make this Cherry Tomato Pasta: 

Making this cherry tomato pasta is super simple. Firstly, we will start by preparing the ingredients and making the sauce. Once the sauce is starting to simmer, we will cook the Spaghetti to perfect al dente consistency. Lastly, we will combine the pasta with the sauce.

Making the Sauce:

Firstly, wash the cherry tomatoes and basil. Halve the tomatoes and set them aside. Give the garlic a good smash with the knife, and roughly chop it.

In a large pan, heat the olive oil on medium heat. Add the tomatoes face down. Once the tomatoes start to soften and lose some liquid, introduce the minced garlic. Sauté the ingredients together for five minutes together. The juices from the cherry tomatoes will stop the garlic from burning too quickly. Toss the mixture around every once in a while.

Cooking the Spaghetti:

Meanwhile, in a pot of boiling salted water, cook your pasta to package instructions. For this recipe, I like to be careful not using too much water for cooking the Spaghetti. I like to have a nice, starchy pasta water to finish the sauce, making it even more creamy! Cook the pasta a minute shy of al dente so we can finish the cooking process in the sauce. Make sure to reserve a cup of that pasta water before draining the spaghetti.

Combining Everything:

Once the pasta’s ready, add it to the pan with the cherry tomato sauce. Add a sip of that starchy pasta water. Also, add some of that delicious basil. Gently mix until the spaghetti is coated in a thick and delicious sauce. Lastly, check for seasoning. Garnish the pasta with the remaining basil, vegan cheese, or any garnishes you like! I went with an additional crack of black pepper.

Ingredients

200g spaghetti

80ml olive oil

300g cherry tomatoes

3 cloves garlic

1 handful of basil leaves

Salt & pepper to taste

Instructions

Wash the cherry tomatoes and basil. Halve the tomatoes and set them aside. Give the garlic a good smash with the knife, and roughly chop it.

Heat the olive oil over medium heat. Add the tomatoes face down. Once the tomatoes start to soften and lose some liquid, introduce the minced garlic. Saute together and toss to prevent burning.

Cook the pasta in a pot of salted boiling water. Cook the pasta a minute shy of al dente.

Drain the pasta and add it to the pan with the cherry tomato sauce. Add some of the starchy pasta water. Also, add some of that delicious fragrant basil. Gently mix so the pasta is coated in a creamy sauce.

Garnish the pasta with the remaining fresh basil, vegan parmesan substitute, or any other garnishes you like.

Notes

If you want to make this recipe gluten-free, opt for gluten-free pasta.

You can add protein to this dish by adding borlotti or cannellini beans to the pasta.
