Protein Popsicles

Tofu, cashew nuts, oat flakes, and spirulina algae make these popsicles a protein bomb! Spinach as a vegetable and banana also contain some protein, especially for being veggies and fruit! These protein popsicles give you plenty of high-quality plant protein as a perfect guilt-free snack after a workout. I’ve even enjoyed them as breakfast during the past hot days. Don’t worry. They taste neither like spinach, tofu, or seaweed. They have a refreshing lemony taste.

Ingredients for making Protein Popsicles:

On a light green wooden base are bowls with cashew nuts, spirulina powder, spinach, rolled oats, dates, and silken tofu. Behind the tofu stands a jug of coconut milk. Next to the jug, there are two lemons and a banana - all the ingredients for protein popsicles.

Needed Equipment:

  • Blender
  • Popsicle mold

The overall size of my popsicle mold is 21 x 14 x 10cm (8,2 x 5,5 x 3,9inch), and the capacity of each popsicle mold is 75 ml. It allows you to make 12 delicious popsicles at once.

If you buy spirulina powder, make sure that it does not contain any additives. Spiruline, Spirulina, algae Cyanophyceae Spirulina, Spirulina platensis, or Arthrospira platensis are what we are looking for.

How to make Protein Popsicles:

Preparation (One Evening before):

First, take the natural cashews and soak them in 90ml of water overnight.
And while we’re at it, we take care of oat flakes and dates, too. Soak the rolled oats and the pitted and roughly chopped dates overnight in the coconut milk so they are easier to blend on the next day. To do this, take a bowl, add the oats and dates, and pour in the coconut milk. Leave both bowls in the fridge.

Make the Creamy Liquid for the Popsicles:

Firstly, take the spinach out of the freezer and let it defrost. Now, take one of the organic lemons, grate the zest on a zester, and put it straight into the blender. Then, squeeze the juice from both lemons and pour it in.

Drain the water from the soaked cashews and put them in the blender. Add the oat flakes-dates-coconut milk mixture, and now puree everything to a creamy consistency. Then add the chopped banana, silken tofu, defrosted spinach, and spirulina algae powder and blend again until smooth.

A spoon helps fill the green protein popsicles mixture into a popsicle mold. All compartments are full. Behind the mold is the lid. In front of it are the wooden popsicle sticks. The mold stands on a light green wooden base.

Pour the mixture into popsicle molds, add popsicle sticks, and freeze overnight. Now, you are ready to enjoy a super healthy protein popsicle!

What is so special about spirulina powder?

Spirulina is a freshwater algae. It is particularly rich in protein and provides numerous nutrients such as vitamins B1, B2, and B3, as well as iron and copper. Its regular consumption can have positive effects on one’s health, which is why it is called a superfood. But be careful while working with the spirulina powder. It has coloring powers: good for our popsicle. It gets this amazing green color!

  • 50g oat flakes
  • 50g cashews
  • 90ml water
  • 300ml coconut milk full-fat
  • 100g dates (5 pieces Medijool dates)
  • 300g silken tofu
  • 150g banana
  • 80g spinach
  • 30ml citron juice

Instructions

Preparation (One Evening before):
Take the natural cashews and soak them in 90ml of water overnight.
Take another bowl, add the oats and the pitted and roughly chopped dates, and pour in the coconut milk. Let it also soak overnight.
Leave both bowls in the fridge.

Notes

If you want to store your frozen popsicles for another day, just put them in a zipper bag and pop them in the freezer! You can also buy small cellophane bags (plastic-free, food-safe and biodegradable) so you can wrap each popsicle individually before putting them all in a zipper bag.
