Making these chocolate cookies is super easy. Firstly, let’s start preheating our oven to 350° Fahrenheit (180° Celsius). Next, get a pot, and melt the vegan butter substitute on low heat.
Next, get a bowl, and add all the dry ingredients to it. Combine the dry ingredients before adding the molten vegan butter, oat milk, and vanilla extract. Add a pinch of salt as well. Next, add ¾ of the chocolate cookies. We want to reserve the rest for garnishing the cookies. Combine until you have uniform dough.
Get a baking tray with parchment paper ready, and you are good to go to shape these delicious chocolate cookies. I like to make small cookies by scooping a big tablespoon of dough per cookie, shaping it into a little ball, and pressing it down with a glass. But big cookies are, of course, just as delicious!
No matter what shape or size your cookies have, don’t forget a generous sprinkle of the remaining chocolate chips.
And in they go into the oven. Bake the cookies for 10-15 minutes, depending on the size and thickness. They will harden once they have cooled. Transfer them to a cooling rack, add a pinch of flakey sea salt, and let them rest for about 20 minutes.
