Plum Popsicles

July to October is plum harvest season. Have you ever thought of making plum popsicles from fresh ripe plums? During the harvest, I first thought of making plum cake (German Plum Cake) or plum jam, but I had to try plum popsicles and was surprised at how easy they are to make and how delicious they were. They are a great way to preserve the plum flavor. Besides, we still have hot days in the fall when a plum popsicle is a tasty refreshment!

Ingredients for making Plum Popsicles:

On a pink-colored base ther are some bowls with fresh plums, dried dates and cinnamon powder. In the foreground is a whole vanilla pod. Behind the bowls lies a ripe banana and a jug with coconut milk.

Needed Equipment:

  • Blender
  • Popsicle mold

The overall size of my popsicle mold is 21 x 14 x 10cm (8,2 x 5,5 x 3,9inch), and the capacity of each popsicle mold is 75 ml. It allows you to make 12 delicious popsicles at once.

How to make Plum Popsicles:

First, we wash the plums and cut them in halves. Put all the fruits in a pot. For sweetness, take the dates, cut them in half, pit them, and add them to the plums. Take the vanilla pod and cut it open lengthwise with a sharp knife. I used a spoon to scrape out all the precious vanilla and put it in our pot – including the vanilla pod. Add the cinnamon spice and the coconut milk as well. Then bring everything to a boil for 10 minutes.

After cooling down the cooked plums mixture a little, put them in the blender. Add banana in pieces, and start blending until you have a creamy consistency. Now fill the popsicle mold, add popsicle sticks, and put it in the freezer. Finally, after freezing for around 24 hours, you can enjoy your plum popsicle!

How can you tell if plums are ripe when you buy them?

Ripe plums feel slightly soft under pressure. The flesh of ripe fruit should be deep yellow to slightly reddish. Unripe plums have a slightly greenish flesh. Depending on the variety, ripe plums have a sweet to slightly tart flavor. If the fruit tastes too sour or starchy, it is not fully ripe.

How do you know when plums are ripe on the tree?

The flesh softens under light pressure and the plum can be easily removed from the branch with a gentle pull. Many varieties have a whitish layer on ripe plums.

How to store fresh plums?

Do not wash them after buying or picking; the plums have a whitish layer on the skin that protects the fruit from drying out. They can be stored in the refrigerator in a paper bag, preferably next to each other.

Can I ripen unripe plums?

Yes, unripe plums can ripen in 2 to 3 days thanks to an enzyme in the plum.

Ingredients

  • 100g dates
  • 250ml coconut milk (full-fat)
  • 1 vanilla pod
  • 2g Ceylon cinnamon

Instructions

Notes

If you want to store your frozen popsicles for another day, just put them in a zipper bag and pop them in the freezer! You can also buy small cellophane bags (plastic-free, food-safe and biodegradable) so you can wrap each popsicle individually before putting them all in a zipper bag.
