An absolute staple of mine is miso glaze. It is super simple to make! It is a versatile way to add a unique depth of flavour to your dishes. No matter if tofu or veggies, it gives that umami flavour to bring the dish to the next level. Miso is a traditional Japanese ingredient made from fermented soybeans. It just works perfectly. 

Ingredients for making a Miso Glaze:

  • Miso paste
  • Rice wine vinegar
  • Cane sugar
  • Sriracha
  • Sesame oil
  • Neutral cooking oil

To make a delicious miso glaze, you’ll need a few simple ingredients. Firstly, it’s all about the miso paste! You should be able to find some in well-sorted grocery stores or Asian markets. Choose a variety that suits your taste preferences. White miso has a milder flavour, and red miso has a bolder punch. You can also combine the two, or buy a mix. I went with red miso paste for a deep taste today! 

To balance this strong flavour, I am using rice wine vinegar for some tang, cane sugar for sweetness, Sriracha for a spicy kick, and sesame oil for flavour. Lastly, I add some neutral vegetable oil. I’d recommend using a heat-resistant oil like peanut oil.

Making the miso glaze is super simple: Mix all the ingredients until well combined. That’s all there is to it. It might take a bit of patience to get the miso paste well incorporated. Next, you can start adding some hot water. Start adding the water slowly, and whisk it in until the consistency of the sauce fits your preference. 

Now, it’s time to get creative with miso glazing! This glaze works wonders on tofu, vegetables, or other proteins like tempeh or Seitan.

Ingredients

3 1/2 tbsp miso paste

2 tbsp cane sugar

2 tbsp rice wine vinegar

2 tbsp sesame oil

3 tbsp neutral vegetable oil

Hot water as needed

Instructions

Combine all ingredients in a bowl. Thin the sauce with hot water, until it reaches your desired consistency.

Notes

You can use red miso, white miso, or a mix for this recipe. Red miso has a bolder flavour.

You can adjust each ingredient to change the flavour profile of the sauce

Use the sauce to marinate or glaze your favourite vegetables, tofu, seitan or tempeh with!
