Asparagus in Puff Pastry

In the spring, I always look forward to the asparagus season. I enjoy all varieties of asparagus. Green, wild, purple, and white are all delicious. While all types are healthy, I particularly love the green variety because it requires little to no peeling when preparing it. Have you ever tried pairing it with puff pastry for a delicious combination? It is super tasty, easy to make and looks fantastic. Surprise your guests at the next dinner with asparagus in puff pastry as a delicious starter!

Ingredients for making Asparagus in Puff Pastry:

Fresh, green asparagus is the star of this dish. Additionally, we only need store-bought puff pastry, green pesto, vegan cream, and some salt to season. Regarding the pesto, I went with a simple store-bought pesto today. If you want to take this dish to the next level, you can try it with a delicious homemade mixed herb pesto or even a seasonal wild garlic pesto.

Asparagus can make a fantastic addition to one’s diet: it is a fibrous vegetable and rich in minerals, such as vitamins A, C, and folic acid. It may support a healthy gut and lower blood pressure.

How to make Asparagus in Puff Pastry:

Firstly, take the puff pastry out of the refrigerator 10 minutes before use to allow it to warm up and to prevent it from breaking when rolled out.

Secondly, preheat the oven to 200°C (390°F).

The asparagus is washed in the sink with a jet of water.

Then we wash the asparagus and dry it with a kitchen towel.

On a wooden table, the asparagus is wrapped in a towel and held by the hands.

If you want to avoid any woody pieces, cut off the bottom end generously. Otherwise, peel them in the lower third and then cut off the dry bottom ends.

The asparagus is cut off with a large knife.

Wrap the Puff Pastry around the Asparagus:

The puff pastry is rolled out on baking paper and completely covered with green pesto. Fresh asparagus is placed next to it on a towel.

To get started, we roll out the puff pastry and spread it generously with the green pesto so that it is evenly covered.

The rolled-out puff pastry is completely coated with green pesto, a knife cuts the dough in strips.

Next, use a knife or dough cutter to slice the dough into long strips from the short side. I like thinner strips, around 2 cm (0.8 inches), it allows the green of the asparagus to show through when wrapped.

Take two or three asparagus spears and wrap them with strips of puff pastry. Place them on a baking tray.

Once all the asparagus is wrapped, coat the top of the pastry with vegan cream and sprinkle it with a pinch of salt.

Bake them in the oven at 200°C (390°F) for 15-20 minutes.

Serving Suggestions:

Asparagus should be processed as fresh as possible. If storing, wrap the bunch in a damp towel and refrigerate for up to three days.

The dish is best served fresh from the oven! Keep in mind that puff pastry loses its crunch if stored for too long, so I’d recommend consuming the asparagus in puff pastry on the same day.

I made a cucumber yogurt with garlic as a side dish (recipe to follow). You can also try my simple vegan cream cheese or vegan beet cream cheese as a colorful and tasty accompaniment to this spring dish.

Instructions

Remove the puff pastry from the refrigerator 10 minutes before use.

Preheat the oven to 200°C (390°F).

Wash and dry the asparagus.

Cut off the bottom end generously, or peel a bit in the lower third and cut off the dry bottom ends.

Roll out the puff pastry and spread the green pesto over the entire surface.

Cut the dough into 2cm (0.8 inch) wide strips from the short side.

Wrap two or three asparagus spears with the puff pastry strips and place them on a baking tray.

Brush the top of the pastry with vegan cream and sprinkle lightly with salt.

Bake in the oven at 200°C (390°F) for 15-20 minutes.
