The ingredient list for oven roasted vegetables is just an inspiration: There are many ways to make this dish deliciously. I like to use lots of root vegetables as they develop such a beautiful sweetness when baked. Today, I am using colourful carrots, apples, beets and parsnips. Adding maple syrup and olive oil will give the vegetables a nice, caramelised coating, which the spices stick to nicely. I went with ground coriander seeds, cumin, garlic, dried rosemary, and some salt & pepper. I love the combination of caramelisation, rosemary and coriander seeds. But you can also adjust the spices to your liking!

Making oven roasted vegetables is super simple. Firstly can get the oven preheated, prepare the vegetables, roast them, and dive in!
Firstly, preheat your oven to 180° Celsius (356° Fahrenheit).
Next, give your vegetables a good wash. You can decide to peel the vegetables or leave the peel on. I like the slightly bold and earthy flavour, so I keep the peel on today. Now, you can cut the vegetables into any desired shape or size. Try to keep them uniform so they all come out done together. I like to have them nice and chunky for a good rustic feel to the dish.
Put your vegetables in a bowl, and toss them with the olive oil, maple syrup, and spices of your choice. Once your vegetables are coated with oil and spices, spread them on a baking tray and transfer them into the oven.
Bake them for about 30 minutes, depending on the size of your cuts. Give them a good toss in between so the vegetables get an even roast from each side.
Check for seasoning, and you are good to go! I plated the vegetables right on the plate with some thinly sliced chives.
