These simple skewers are a delicious vegan option for any barbecue. If you haven’t tried mushroom-based skewers, now is the time! They feature exciting textures and lots of umami flavour. These vegan skewers only require a few ingredients and are easy and quick to prepare.

  • Smoked paprika
  • Cumin
  • Soy sauce
  • Garlic
  • Maple syrup

As you can see, the ingredient list is super short for this one. Oyster mushrooms do the trick for the skewers with their delicious meaty texture. Aside from the mushrooms, a simple marinade with smoked paprika, cumin, soy sauce, and maple syrup is all you need! If you want to make this recipe gluten-free, simply swap the soy sauce for Tamari instead. This marinade has a deliciously balanced and smokey flavour, but you can customise it further to your liking! Some chilli for additional heat makes a nice addition too.

How to make Vegan Skewers:

Making these vegan skewers is pretty simple! First, we prepare the mushrooms, marinate them, and grill or sear them!

Preparing the Mushrooms:

Firstly, let’s get our mushrooms sorted. If needed, clean them with a damp towel. Next, we want to cut them. Slice each mushroom lengthwise to a bit less than a centimetre (0.4 inches) of thickness.

Next, we want to soak the mushrooms in hot water. The hot water will soften them, making them easier to work with and giving the mushroom skewers a better texture. Add the sliced mushrooms into a bowl, and cover with boiling water. Let them soak for about 15 minutes before draining the water. The mushrooms should have become soft, which makes it easy to put them on the skewers.

Marinating the Mushrooms:

Next, let’s make our marinade. Mix the spices, soy sauce and syrup, and add them to the mushrooms. Furthermore, add the garlic after crushing it with a garlic press. Alternatively, you can finely mince the garlic as well. Combine everything well. Cover the mushrooms, and let them marinate for at least half an hour. You can also prepare the mushrooms beforehand. Letting them marinate longer will intensify the flavour.

Take the mushrooms, and fold them in the middle before adding them to the skewers. Aren’t they already looking delicious?

Cooking or Grilling the Skewers:

Finally, it’s time to cook our skewers. You can either grill them on a barbecue or sear them on high heat in a pan. Sadly, the weather hasn’t been grill-friendly just yet, so I am using an electric grill today. Usually, I love the smokey notes these vegan skewers get from a barbecue grill, which is my preferred option for preparing them. Sear the skewers until they develop a good colour. You will want to use some heat resistant vegetable oil if searing them in the pan. They are best if they get a light char on each side. But be careful not to overdo it. We don’t want to burn them.

Test one of the skewers to see if the mushrooms are tender. We want to avoid chewy mushrooms. If needed, you can transfer them to lower heat or add them to the oven at 180° Celsius (356° Fahrenheit) for another 10-15 minutes until nicely tender.

  • Serving tip: Enjoy these skewers with lots of delicious sauce. I am going for my simple peanut sauce today, which works perfectly. I also added a few chilli flakes for some extra heat. But other sauces like barbecue sauce or even salsas make an interesting pairing too!

1 kg of oyster mushrooms

1 tbsp smoked paprika

1 tsp cumin

80 ml soy sauce

5 cloves garlic

3 tbsp maple syrup

Instructions

Clean the mushrooms with a damp towel. Slice each mushroom lengthwise to approximately a centimetre (0.4 inches) of thickness. You can also go a bit smaller than that.

Let the mushroom slices soak in hot water for 15 minutes until soft. Drain the water before marinating the mushrooms.

Mix the spices, soy sauce (or Tamari) and syrup, and add them to the mushrooms. Furthermore, add the garlic after crushing it with a garlic press. Combine everything well. Cover the mix, and let it marinate for at least half an hour.
