How to make miso glazed cauliflower:

Making the miso glazed cauliflower is very simple, once you have the glaze on hand. For that, you simply need to combine the ingredients and dilute the sauce with a bit of hot water. Next, preheat your oven to 200° Celsius (392° Fahrenheit). Give the cauliflower a thorough wash. Then, you can break the cauliflower into bite-sized pieces. You can also opt for bigger chunks or roast the cauliflower whole! It works perfectly and makes for a cool presentation.

Add your cauliflower chunks into a bowl, and toss them with the miso glaze.

With the preparation done, the only thing left is to roast the cauliflower in the oven. Distribute the pieces evenly on a baking tray, and roast them for 15-20 minutes. A good toss ensures an even roast from all sides!

If roasting the cauliflower whole, I’d recommend covering it and roasting it a bit longer, for approximately 30 minutes. Putting it in a Dutch oven should work fine. Lastly, finish the cauliflower by roasting it uncovered for another 5-10 minutes.

Regarding the presentation, you can choose different styles depending on if you want to have them as a separate snack or as a side dish. I went with a bit of thinly chopped chives, freshly grated ginger, and sriracha. A bit of spice works perfectly with this miso glazed cauliflower.

This miso glazed cauliflower is one of my favorites. A perfect example of how much umami such a simple glaze can bring!

You can use the same glaze to prepare delicious mushrooms, eggplant, tofu, or other vegetables as well!
