Ingredients you need for making maple glazed carrots:
- Carrots (choose a variety of kinds)
- Vegan butter or olive oil
- A sip of dry white wine
- Garlic
- Maple Syrup
- Rosemary (Dried or fresh)
- Salt & pepper
Gazed Carrots Recipe:
Making the glazed carrots is super quick and easy. First, let’s get started by preparing our carrots. You can either peel them or leave the peel on. I personally like to keep the peel on, as I enjoy its earthy, bold flavours, and I don’t mind the texture. If you want a softer mouthfeel of the carrots and a milder taste, you should take the peel off. I cleaned the carrots with a vegetable brush and cold water before moving on with the recipe. Next, I like to slice the carrots in half. You can also opt for any other shape and size of the carrots!
Next, give the garlic cloves a crush with the flat surface of your knife. Discard the peel, and leave the crushed cloves whole. We can add them to our source of fat like this, which will nicely infuse it with its flavour.
Put a pan on your stove, heat it to medium heat and add your vegan butter or olive oil. Once melted, add the garlic cloves and rosemary, and allow the oil to infuse with its flavour for two or three minutes. Next, add your sliced carrots, white wine, and maple syrup.
Toss everything gently, add salt and pepper, and cover the pan. Cook the carrots with the lid closed until soft, which should take approximately 15 minutes. Check the consistency of your glazed carrots with a fork.
Once the carrots reach the desired consistency, slightly turn up the heat. Take off the lid, and simmer away the remaining liquid while carefully tossing and flipping the carrots. Be careful to not damage or break them during this process. After approximately five more minutes of cooking, the carrots should be coated in a thick, delicious maple glaze.
