1/2 banana
1 tonka bean
2 glasses of freshly brewed water kefir
Instructions
Firstly, make a fresh brew of water kefir ready for secondary fermentation. If this is your first time making water kefir, check out this ultimate water kefir guide.
Peel the banana, and cut the fruit into manageable pieces fitting in your jar or bottle for secondary fermentation. Smash the tonka bean lightly so it releases more flavor and divide it to the bottles.
Top everything off with your freshly brewed water kefir, and let them ferment for 24-48 hours until the kefir reaches a flavor you like. This time will depend on the strength of your kefir, the temperature, and your preference for taste. I’d recommend regularly burping the bottles to avoid explosions.
Notes
Keep the kefir in a dark place at room temperature during fermentation.
Once satisfied with the flavor, you can strain the fruit and tonka from the bottles so it doesn’t adopt more of its taste. Keep the bottles chilled to slow further fermentation. Still, the drink will continue to develop, so I recommend consuming it soon after you think it is ready!
