Ingredients
250g all purpose flour
30g white sugar
30g cane sugar
1 tbsp instant coffee
3 shots of espresso
75g of melted vegan butter substitute
1 tsp cinnamon
50g baking chocolate
50g vegan dark chocolate (78% cocoa)
1 pinch salt
Instructions
Firstly, mash the bananas with a fork in a bowl. Add the flour, white sugar, instant coffee, melted vegan butter substitute, espresso, cinnamon, baking powder, and a pinch of salt, and combine. You can already preheat the oven to 180° C (360F°).
Add finely chopped dark chocolate and half of your baking chocolate. Check for seasoning. The dough should have a rather wet consistency.
Mix the dough by hand just until all ingredients are combined.
Add the dough to a greased loaf pan and sprinkle the banana bread with your remaining baking chocolate and cane sugar.
Bake the banana bread at 180° C (360° F) for 50 mins. Let the banana bread sit for 15 minutes after baking before digging in.
Notes
You can add some plant-based milk or more coffee if the dough is too dry.
