Ingredients
- 12 elderflower blossoms
- 160g spelt flour
- 5g baking powder (2 tsp)
- 100ml oat milk
- 80ml soda water
- 20ml maple syrup (2 tbsp)
- 3g vanilla sugar (1 tsp)
- 30g apple sauce
- 150g coconut oil
Instructions
Pour the spelt flour into a mixing bowl, and sift in the baking powder.
Then, gradually add all the other ingredients and mix with a hand mixer, until you have a smooth batter.
Heat a small frying pan and melt half the coconut oil. Add the rest later when the oil is running low.
Take an elderflower blossom by the stem, dip it in the batter, then put the flower directly into the hot pan.
There should be enough oil in the pan; the flowers will be fried rather than baked.
Turn when the fried side is nice and golden. You can also drizzle a spoonful of oil here and there.
Process all the elderberry flowers until you run out of batter.
After frying:
Prepare a large plate with paper towels.
Place the elderflower pancakes on top and let the paper absorb the excess oil from both sides. Repeat this process several times.
Notes
Before serving, cut the stems close to the flower because they are slightly toxic.
I offered apple sauce with the elderflower pancakes. Vegan vanilla ice cream might also be nice.
