Let’s make some of the most delicious side dishes ever: Oven roasted vegetables! This fibre-loaded side is super easy & quick to prepare and freaking delicious.

Vegetables of choice

2.5 tbsp maple syrup

1 tbsp ground coriander seeds

1.5 tbsp rosemary

1 5 tbsp cumin

5 tbsp olive oil

¾ tbsp salt

Pepper to season

Instructions

Preheat your oven to 180° Celsius (356° Fahrenheit).

Give your vegetables a good wash. You can decide to peel the vegetables or leave the peel on.

Cut the vegetables into any desired shape or size. Try to keep them uniform so they all come out done together.

Put your vegetables in a bowl, and toss them with the olive oil, maple syrup, and spices of your choice.

Once your vegetables are coated with oil and spices, spread them on a baking tray and transfer them into the oven. Bake them for about 30 minutes, depending on the size of your cuts. Give them a good toss in between so the vegetables get an even roast from each side.

Notes

Some other ingredients that work well with oven-roasted vegetables: Garlic powder, onion powder, paprika powder, smoked paprika powder, nutmeg, cinnamon, thyme, herbs of the Provence, chilli, and five spice. All of those can give delicious flavour!

Other ingredients that taste delicious as oven-roasted veg: Cauliflower, sweet potato, potato, bell peppers, eggplant, and pumpkin.
