Miso Glazed Tofu (Tofu Dengaku)

This miso glazed tofu is such a simple and delicious preparation of tofu. Glazing the tofu with a flavorful miso marinade will make it burst with umami flavor.

Ingredients

Scale

300g extra firm tofu

1 tbsp sriracha

1 tbsp grated ginger

3 1/2 tbsp miso paste

3 tbsp cane sugar

2 tbsp rice wine vinegar

2 tbsp sesame oil

3 tbsp neutral vegetable oil

Hot water as needed

Optional: 4 cloves pickled garlic

Optional: 2 tbsp chopped fresh chives

Instructions

Combine the liquid ingredients with the grated ginger in a bowl. Mix together well and dilute the glaze slightly with some hot water, until you have a thick sauce. Check its taste and adjust the flavor to your liking.

Gently press out any liquid from the tofu. Cut the tofu into your desired shape. Marinate the tofu in the glaze for at least 1-2 hours, preferably overnight.

Sear the tofu evenly from all sides on high heat. To plate it, I simply garnished it grated ginger, sliced pickled garlic, sriracha, and chives. You can apply additional glaze during or after cooking, depending on how thickly you like the tofu to be coated. 

Notes

This glazed tofu is a super versatile dish. You can have it as a side dish, with bowls, or even vegan ramen.
